How does it do this? It may seem like magic, but it's actually simple science. Immersing the grounds in the water causes a rapid extraction of the bean's flavor. It also allows you to brew the coffee at a moderate temperature, which makes for a smoother brew. After the water and grounds have mixed for a mere ten seconds, gentle air pressure pushes the mix through a micro-filter. This twenty second process eliminates the bitterness that plagues longer processes like drip brewing, and also prevents the gritty texture of French-pressed coffee.
