The three ply bonded construction of stainless steel layers over an aluminum core conducts heat in a masterful way. As it is highly polished stainless steel, the surface will resist stains and corrosion and ease the release of food. Acidic foods are no problem and won't come out tasting metallic. Safe inthe oven for up to five hundred degrees, the pan offers stay-cool handles for the stovetop. It is dishwasher safe, but hand washing is recommended. Don't let that frighten you. My stainless pans are as easy to clean as any nonstick.
