Baked French Toast in Orange Juice with Cardamom

spicesBaking French toast in the oven takes less time because all the pieces of toast can be cooked at once.  The combination of orange juice and cardamom gives this French toast a special taste everyone will enjoy. Experiment with other spices too, if you like.

For those days when cooking just isn't an option, here's a Back To Basics toaster with built-in egg poacher.

Ingredients:

  • 1/3 C orange juice
  • 1 tsp. orange peel, grated
  • 4 eggs
  • 1/2 tsp. ground cardamom
  • 1/4 C butter
  • 12 slices day-old French bread, appx. ¾-inch thick

Directions:

Preheat the oven temperature to 450 degrees. Place the juice, orange peel, eggs, and cardamom together in a mixing bowl. Beat with an electric mixer on low until blended together well. Place the butter into a 13X9 baking dish. Place the baking dish into the oven until the butter has completely melted. Dip the slices of bread into the orange juice mixture until well covered, allowing any excess to drip back into the bowl. Place the coated bread slices into the pan with the melted butter. Bake 6 minutes, then turn each slice over. Continue baking an additional 4 minutes or until nicely browned. Makes 6 servings.

Preparation Time:  approximately 5 minutes
Cooking Time:  approximately 10 minutes
Total Time:  approximately 15 minutes
