The white cream cheese, red pepper, and green basil automatically might make one think that this cheese ball recipe is perfectly suited for Christmas or Cinco de Mayo. But it's a great appetizer to flaunt any time of year, since the cheese can be molded however you see fit, and the dipping possibilities are endless.

  • 24 ounces cream cheese, softened
  • 3 1/2 to 4 cups shredded mild cheddar cheese
  • 2 tablespoons basil pesto
  • 1 1/2 tablespoon grated white onion
  • 3 drops medium to hot red pepper sauce
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup sliced almonds
  • 2 1/2 tablespoons chopped red bell pepper

Mix cream cheese and mild cheddar cheese together. Blend in pesto, onion and pepper sauce. Refrigerate until firm, about 3 hours. Remove and roll into cheese balls, or desired shape. Roll cheese mixture in parsley, almonds and red peppers, and serve with an assortment of crackers or other dippers of your choice.
