This recipe is made with Salsa de Molcajete, a smoked salsa prepared in a Mexican mortar and pestle dish. You can substitute any salsa that you like, or you can try your hand at homemade smoked salsa below:

To make the salsa, gather 6 medium tomatoes, 1 jalapeno, 1 fresh garlic clove, and 3/4 tsp. kosher salt. First, roast the tomatoes and jalapeno in a cast-iron skillet until mostly charred. Then grind the garlic in the molcajete until it becomes a paste. Add the jalapeno, then mash again. After adding the tomatoes, roughly mash and mix for a chunky consistency.

  • 1 cup dried black beans
  • 3 to 5 cloves garlic
  • 1 tsp Kosher salt
  • 2 bay leaves
  • 1/2 tsp chipotle pepper puree (optional and to taste)
  • 1 tsp pure maple syrup (optional)
  • 1/4 cup Salsa de Molcajete (on Rouxbe)
  • 1 cup coconut milk
  • salt (to taste)
