This recipe for beef short ribs is extremely flavorful and adds a spicy kick with ancho chilies and chipotle peppers. Its braising sauce combines ingredients not often used together to make them rich, sweet and flavorful -- such as onion, cloves, maple syrup, strong coffee, and lime juice.

It's not a quick recipe, but the tender texture and rich flavor that you'll get from this slow cooking method is worth it. While relatively easy to prepare, especially if you measure the necessary ingredients ahead of time, the ribs should braise in the oven for at least 2 hours. If you substitute pork ribs for beef short ribs, the cooking time is shorter.

You can use either a Dutch oven or oven-safe everyday pan for braising -- just make sure you have a lid that fits securely on top. Or, if you want to brown the meat first, add everything to a crock pot and leave it in for a couple hours.

When it's time to pull the ribs out of the oven, you'll know. The ribs will fall apart easily. If using pork ribs instead, cook until the meat is fork tender.

  • 6 lb beef short ribs (2 1/2" cross cut)
  • 4 whole dried ancho chilis

  • 1 medium onion
  • 4 garlic cloves
  • 2 Tbsp canned chipotle peppers
  • 2 Tbsp chipotle pepper sauce (from can)
  • 6 Tbsp pure maple syrup
  • 2 Tbsp fresh lime juice
  • 1 1/2 Tbsp Kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup brewed coffee (strong)
  • 2 1/2 cups Water
