Budin de pan con pasas is simply translated "bread pudding with raisins." An optional method of cooking this recipe is to save a handful of raisins for a separate bowl and fill it with quality rum. Soak the raisins until they are soft, and then add to the pudding once cooked.
Ingredients:
- 1/2 lb. bread pieces
- 2 cups milk
- 2 cups cream of coconut
- 4 eggs, beaten
- 4 Tablespoons butter
- 1/4 teaspoon salt
- 1 cup sugar
- 1 teaspoon cinnamon
- 1 cup raisins
- 3 Tablespoons flour
Directions:
Place bread pieces in bowl and cover with water. Wait 10 minutes and then grind into smaller pieces. Add milk and cream of coconut. Mix well. Add the remaining items, and mix thoroughly. Pour batter into a greased pan, and bake in a 350-degree oven for 40 to 60 minutes.
