Calphalon Contemporary Roasting Pan Everyone needs one good roasting pan: the one that cooks the holiday turkey every year, and the giant lasagna for parties. It might not get used as often as the smaller pans, but it's always there year after year when needed, and always delivers.

This roasting pan by Calphalon looks to have what it takes for the long haul. It's made from three layers of 18/10 stainless steel with an aluminum core. The aluminum is in there for better heat conductivity and dispersal across the surface. Read- fewer hot spots. This is not one of those lightweight pans that begins to warp when things heat up in the oven. It weighs in at almost 10 pounds empty! The interior finish is polished for easier cleanup-- this means you want to avoid using abrasive cleansers or heavy scrubbing pads that will scratch up the surface on this. The handles are large, as they should be to handle this pan when maneuvering in and out of the oven. Though, they have an odd inward curve to them that is not very comfortable to grab with oven mitts.

The pan is obviously heavy and well made, but the same cannot be said for the included roasting rack. While stainless steel would have been a good choice, and a better pairing with the pan, the rack is made from basic steel and coated with a nonstick finish. It works fine but isn't built to last as long as the roasting pan.
