Cuisinart has come to the rescue with a line of bakeware pans that promise to take whatever you can dish out...of them.

This cake pan is the classic size for most cake recipes, and just right for cornbread and carrot cake as well, my personal favorites. It is manufactured from aluminized steel. This is meant to improve corrosion resistance and reduce the weight of the pan. We've all had cake pans that have warped in the hot oven before. This pan has extra-thick rolled rims meant to prevent that sad condition.

Completing the picture is the nonstick coating. A product called "Whitford Xylan" is applied to the inside and the outside of the pan, and a little research taught me that this product was originally formulated to protect metal parts on offshore equipment subjected to the harsh sea and toxic chemicals. Wow, I think it should handle a batch of brownies like a champ!

These pans are advertised as dishwasher safe, although with the nonstick finish a quick wash in the sink should be sufficient to get them clean. The one spot where I always notice corrosion begin is those rolled edges. They trap moisture and of course the least protected metal edge is in there. My trick is to quickly wash out the pan then put it back into the still hot oven to bake it dry. It's worked pretty well so far for my pans.

Very popular in Minnesota, where I grew up. Everyone has at least two of these pans in their kitchen. The one you "borrowed from Mom" and never returned, and the one Mom gave you for Christmas in the hopes of getting hers back.

Cuisinart has produced a nice heavy duty pan here. It cannot actually be called a "Bundt" pan; that name is a trademark of NordicWare, the originator of the modern fluted cake pan. Still, naming restrictions aside, this version is manufactured from aluminized steel to reduce weight, and coated inside and out with a non-stick finish.

The interior coating is very slick, and a bright silver color. It could be my imagination, but it seems to reflect the heat back in a way that cooks more evenly than the darker colored metal cake pans. The outer edge of the pan doesn't end abruptly as others do, but has a rolled over lip on it. This keeps dripping over the side while cooking to a minimum as well as easing the removal of the cake.

This pan is advertised as dishwasher safe, but I recommend that you gently hand wash this and towel dry. The dishwasher uses harsh cleansers and water temperatures much hotter than hand washing, and will shorten the life of metal cookware and the non-stick finishes used.

This is a pan that will give you many years of service if cared for, long enough for one of your kids to borrow it...

If you follow the instructions, you will have a specialty pan that gets better with age, and is ready year after year for those Valentine's Day treats, whether they be cupcakes, cheesecakes, or even tiny heart-shaped quiches or other savory items.
