Steamed, lightly salted, nothing but the essential natural flavor of the food to stand out on the plate. This works best with some of the least popular foods of childhood: lima beans, brussels sprouts. Using fresh or frozen ones to start, you will be thrilled by the taste results. Maybe even change a few finicky minds.

This steamer is made to fit the three and four quart saucepans and casseroles manufactured by All-Clad. Add a little water to the lower pan, pop on the steamer and a lid. You can steam seafood and meat as well as vegetables. It is an extremely fast, healthy method for cooking. I've used mine with a smaller glass dish inside to heat oils.

Because the cleanup of stainless makes it easier, we even prepare little homemade steamed dumplings, our version of the Asian Salapow. We make our own in different flavors; precook the fillings and pinch them shut. They don't always turn out as pretty as professional or commercial varieties, but there are never leftovers. Any extra filling makes a great addition to pasta or rice dishes the next day.

This is a hefty pan with enough mass to cook for a while on stored heat after you turn the burner off, so remember to remove it from the stove top before food is overdone. Once you learn the trick of it, this is a great energy-saving feature. It's also very solidly built, with stainless steel rivets holding the handle in place. I've never seen a loose handle on an All-Clad.

The three-ply construction uses 18/10 stainless steel for the interior, an aluminum core in the bottom for efficient heat distribution, and a magnetic stainless steel bottom that makes the pan usable even on induction burner stovetops. All layers are permanently bonded, and the result is a pan that heats up quickly and evenly, cooking on lower heat settings than you'd need for lighter pans.

The polished stainless steel cleans up easily and is dishwasher safe, but the finish fares better if you wash and dry the pan by hand.

Enameled cast iron retains heat and promotes even cooking at low heat; this ensures that the best flavor is brought out from the ingredients. But like its added attractiveness, the bonuses to construction with these materials also comes at a cost-- about three or four times the cost of the All Clad.

Lodge Logic's 7 quart Dutch Oven, on the other hand (or should I say other burner), costs about the same and offers the durability and heftiness of cast iron. But I don't know that I'd serve directly from it either.
