Not only should this help with consistent heating, but it will be far easier to cook two types of food at one time without having to sacrifice quality.

It is possible to both grill and griddle cook at the same time, a very convenient feature and another reason those dual controls are a fantastic idea. The clips which secure the plates on this model appear to perform much better than those of competitors. It helps that the plates don't have to fight gravity to sit properly.

The drip tray on the Griddler Combo sits precisely where food is most likely to spill- between the plates. That is a wonderful way of turning a potentially serious negative into a positive. Some people have trouble with eggs because of this construction, but I believe there are ways around that with a little experimentation and a slightly higher heat.

Please note that the handles are not cool during cooking and that the appliance should be allowed to fully cool before cleaning. Since most of the product is dishwasher safe, this shouldn't create more work. Altogether, this is a well designed and well thought out item, another win for Cuisinart.

Companies that make toilet paper, cars, cleaning products, and clothes are all jumping on the eco-friendly band wagon. So why not kitchenware?

But what is it about Cuisinart's 11 inch Grill Pan that makes it green? The hard-anodized aluminum square griddle is not in itself a new idea. But the scratch-resistant nonstick ceramic-based surface does offer something new.

The water-based Ceramica, a nonstick surface that won't peel off, is free of PTFE and PFOA. This allows the griddle to be heated up to 500 degrees F without worries of PTFE degradation causing you flu-like symptoms or PFOA being a carcinogen. It also means the griddle is oven- and broiler- safe.

Additionally, superior heat conductivity means less energy use. And the securely-attached, stay-cool stainless steel handle is made of 70 percent recycled stainless steel. Energy conservation and recycling are about as green as it gets.

The new cookware conforms to FDA and European RoHS standards for environmentally sound products. Cuisinart is even getting some "green" kudos for the grill's packaging which is made from 100 percent recycled materials and printed with 100 percent biodegradable soy ink.

Perhaps it's time that being green is just par for the course.

I am as guilty as anyone about occasionally having nothing at hand but a fork or metal spatula and I risk using one, even though I know better, on other nonstick pans. We do what is convenient. This relieves me of the guilt.

People frequently argue about the best choice in the size of a pan. I believe that it is better to go a little too big than to find your choice a bit too small. I like some elbow room in there so that ingredients can be turned and every item can have good contact with the surface. We have a small household with hearty appetites and I can't imagine using anything less than a twelve inch.

The pan is made to handle well. It doesn't require weight to cook thoroughly using this type of construction and materials. You simply aren't going to get the same grill marks from a pan that you can on an actual grill, but you get a good likeness and you get it with nice balance and features (like the drip free, tapered rim) that enhance the pan's use.

That sounds underwhelming but it is what it is. It's a small version of the extremely-popular Griddler. In functionality, it's similar to the George Foreman grill. But you can use it a few different ways. It's great for burgers and can cook them on both sides. You can also just use it as a grill and grill up some steak or chicken. It's a nice compact size for singles or couples. You can let it live on your countertop.

It shares most of the features that other countertop grills have. The adjustable hinge adjusts to different thicknesses (hello big sandwiches!). It allows the fat to run off into a drip tray.

It does have two features that you don't find on all comparable products. You can use this Griddler as a panini press, which is very cool. (I love appliances that multitask.) And the best part if that the plates are removable for easy clean up. You can pop them out and pop them right into the dishwasher.

So it does exactly what it claims to do and it does that well. It's not the best value for a product like this, but it works like a charm, so you're getting your money's worth.

Here's a better grill to consider if you make a lot of overstuffed sandwiches.

The Griddler is a very mixed bag. People tend to love it or hate it, with the majority loving it, yet many troublesome issues must be considered. The grill heats quickly and offers higher temperatures not always attainable with other models, but occasional temperature rebound issues occur when foods are added. Grease collection problems and splatter are common complaints and with the open sides, droplets tend to fly in many directions. Breakage of essential small parts can render the entire unit useless, though the warranty offered may help alleviate any fears of defect.

The brushed stainless steel exterior is called cool touch housing according to the Cuisinart site, but make no mistake, it will heat during use and can burn. The Griddler, according to Cuisinart's manual, can take ten minutes to reach operating temperature, another drawback if you're constantly waiting for the surfaces to regain proper cooking power. Also, a recommend thirty minute wait for cleanup in order to cool down is necessary to prevent burns, but isn't always convenient or conducive to easy cleaning. If time is a factor in your choice of appliance, this may not be the fit for you.
