The Scanpan Classic 11-inch Square Griddle gives nonstick results without the weight of cast iron. Hand-cast aluminum poured under 200 tons of pressure distributes heat evenly over the entire surface of the griddle. The ceramic titanium coating sears meat, fish, and poultry without sticking and resists chipping and corrosion.

Consistent thickness eliminates distortion often found with thinner aluminum pans. A perfectly flat base rests flush upon modern ceramic or glass-topped ranges for even more efficient heat transfer. The depth of the grill and the reasonable size avoids the awkward handling problems common with many flat cast iron griddles, but with this version you'll still need to pay close attention to the leveling of your cookstove. If you haven't gotten out the carpenter's level and gotten that perfect alignment, now it's time. The griddle holds a reasonable amount of waste grease and other drippings, but for the best results, work on a level surface.

Three pounds straight out of the box, the griddle will still be a challenge to handle when hot grease lines the bottom. Stovetop griddles should be allowed to cool before moving them to the sink for cleaning. If pouring off hot grease, work slowly and carefully because weight tends to shift suddenly as all the fluids move to one side.

The griddle is oven-safe to 500 degrees and can be used on the stovetop on high heat. That setting shouldn't be necessary, and the rating doesn't mean you can safely abandon the hot griddle on an active stove. Grease fires could happen. Use only as much burner heat as makes good sense.

This griddle/grill allows searing and low fat cooking with the familiar grilling marks produced by restaurant quality systems. With the flat side up, you have space for preparing a family sized breakfast of pancakes or eggs and bacon, without waiting on smaller skillets to produce.

The grilling surface is deeply grooved, with a large trough around the edge to collect fats and oils. You can achieve fine results with this system, but hand cleaning will be the price you pay.

Plain cast iron contains a lot of carbon and is to some degree resistant to sticking. Adding an enamel coating improves that, but there's still some curing time involved. Oils soak into open pores and create a low stick surface, but not a non-stick grill. Some caution is needed to protect that enamel when cleaning, so follow Staub's directions carefully. Plain cast iron genuinely improves with age and use. With this enameled version, you get the best performance much more quickly.

Let the grill sit on the stovetop until it cools enough to handle -- there's no safe way to move it when it's hot and full of waste fats. Cast iron will break if dropped, and enamel finishes will chip, so enjoy the food and save the work for later.

Mario Batali is trying to bring back this very basic form of griddle cooking with his solid granite version.

Using this stone provides comparable heat to that of cast iron, without the accompanying hassle and upkeep. A bit of preheating is required to get the heat set into the stone, but then you have a surface that is up for anything. Cover the stone and wait fifteen minutes, brush with oil and it is ready to go.

My mouth waters considering the flavors possible using the stone over an open fire. The piastra can also be used on the grill and is safe for the microwave or oven. One side has a flat griddle surface, the other a raised grill surface. The stone can also be used to prepare lovely crusty breads and pizza. The half inch thickness of the granite means a strong stone.

The chef has a series of recipes for use with the piastra in his book Italian Grill, but you can have a peek at a few examples on his website and peppered through the online cooking arena. The old ways are often the best.
