The kitchen appliance that looks more than anything like a small outboard motor, the Immersion Blender – also known as a Wand Blender or Hand Mixer- is simply an enclosed, spinning blade at the end of a motorized handle. The concept is genius in its simplicity- bring the blender to the food rather than the food to the blender.
Immersion Blender History
The first immersion blender was invented in Switzerland in the 50′s, and much larger versions have been in use in restaurant kitchens since the 60′s. These appliances have been available for the home cook in a variety of forms for the last twenty years, and have become very popular, as the models to choose from continues to grow.
The Blender is used for stirring, blending, mixing and pureeing foods by simply immersing the blade end in the food you are preparing and pressing the button. You can puree soups in the cookpot while they’re cooking, make smoothies and blended drinks in a cup or pitcher, smooth sauces and de-lump gravy right before serving, all without the messy process of transferring food to a blender or food processor and back.
These appliances are meant to be simple to use and easy to clean up afterwards. On most units, the blade attachment is removable for cleaning, and dishwasher safe. This is an important feature to look for, as cleaning otherwise can be a challenge. You can choose between single and multiple speed models, depending on your needs. Some prefer the single speed for simplicity, while the multiple speeds allow you to better control the process, especially with more delicate mixing operations.
There are corded and cordless models, the latter featuring a rechargeable battery. Of course these tend to be higher priced, as they incorporate internal batteries and charging circuitry. For some the convenience is well worth the price, to not have an electrical cord dangling over the stovetop, or to be able to mix up drinks while entertaining outside on the patio.
With the popularity of these blenders comes greater versatility, as brands attempt to position their products as the most useful in the kitchen. Many now feature food processor attachments in addition to the immersion blade, so you can chop small quantities of dry foods like nuts and herbs, and mince garlic etc.
When comparison shopping, look not only for how powerful the unit is but how quiet it runs. The higher end models, and especially the cordless versions tend to be much easier on the ears. Whenever possible, try the blender out in the store. It should be comfortable to hold and not feel flimsy. Look for a Stainless Steel shaft and blade for durability.
