The pizzelle originated in the Abruzzo region of Italy, a destination known for its wheat and pasta products, grapes, and olives. The word “pizzelle” actually means “little pizza,” and is even pronounced the same way (with a ts inflection on the zz’s).
Today’s pizzelle remains true to tradition — a thin, crispy wafer cookie made with eggs, sugar, flour, and often anise, giving it a slight hint of licorice flavor. Other variations of pizzelles can be made with more palatable vanilla or chocolate flavors.
There are several kitchen appliances dedicated solely to perfecting the art of a perfect pizzelle. Most are electric. Some are modernized and boast automatic, non-stick features, while others take a bit more time using a traditional cast-iron approach. A lot of modern waffle irons have interchangeable plates that will allow chefs to make pizzelle cookies as well.
