On July 9, the world's most famous newlyweds paid a visit to Santa Barbara, CA. As a part of their action-packed Californian weekend, Prince William and Kate Middleton attended a charity polo match at the Santa Barbara Polo and Racquet Club -- and celebrity chef Giada De Laurentiis was asked to prepare the luncheon for the event, named the Foundation Polo Challenge.
The Emmy-winning host of Everyday Italian served a three-course meal to the Duke and Duchess of Cambridge and all 3,600 VIP attendees, calling it "a light and fresh menu" of Italian-Californian fusion cuisine.
The first appetizer course was a pea pesto crostini: pureed peas spread on toast and topped with a halved cherry tomato garnish.
The second salad course featured a Californian chopped salad with everything grilled to perfection, even the greens. Lettuce, shrimp, and corn were grilled and tossed with zucchini and crisp tortilla strips, then topped with a light lemon dressing.
For the main course, Giada prepared her chicken Milanese. The celebrity chef served the breaded chicken cutlets with a creamy tomato and fennel sauce.
Other dishes that may have appeared on the menu include beef tenderloin crostini with basil-curry mayonnaise, tarragon and Merlot truffles, and mini lasagnas with fresh corn, mascarpone cheese, blistered tomatoes and roasted asparagus.
Tickets for the Foundation Polo Challenge were sold for $400 for Club admission and $4,000 for VIP access. Proceeds benefited the American Friends of the Foundation of Prince William and Prince Harry and the local non-profit Polo Training Center Santa Barbara.
