Squid is a seafood that either needs to be cooked quickly or slowly; otherwise, it gets a rubbery texture. In this recipe, the calamari is quickly fried in peanut oil to make it nice and crispy.

Most of the time spent making this recipe will be for the prep work, so if all of that is done ahead of time, you'll breeze right through the steps.

The calamari is first chilled for half an hour in chipotle, basil, and garlic marinade. Then, it's lightly tossed in a flour mixture and quicky deep-fried for 20-30 seconds before removing with a wire skimming ladle. Fry small batches at a time instead of all at once.

If you like, you can also substitute prawns in the recipe instead of squid -- although they will take longer to cook.

  • 3 fresh garlic clovess
  • 6 fresh basil leavess
  • 2 tbsp chipotle pepper purée (or more to taste)
  • 1 large egg
  • 1/2 cup milk
  • 1 lb squid
  • 6 cups peanut oil - can substitute with canola oil (for frying)
  • 2 cups all-purpose Flour
  • 2 tsp Kosher or grey salt - can substitute with 1 teaspoon table salt
  • 2 tsp freshly ground black pepper
  • 1/2 small red onion
  • 1/2 bunch fresh Italian parsley - can substitute with basil (for garnish)
  • 1 whole lime - can substitute with lemon (for garnish)
