For those without allergies, consuming tree nuts adds a lot of health benefits into the diet. Walnuts, for example, contain an extremely high level of vitamin E for their size. The type of vitamin E is rare as well (gamma-tocopherol) and has been shown to protect against heart problems.

For extra nutrients, make sure that the walnuts you're using still have the skins on. 90% of the phenolic acids (known for anti-aging and anti-inflammatory properties) in walnuts are in the skin.

If you're not a fan of walnuts, pecans also work really well in these Cookie Squares. It's an easy recipe that your kids will have fun making with you, too.


  • 1 C flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 2 C brown sugar, packed
  • 2 C walnuts, chopped
  • 2 eggs
  • 1 tsp. vanilla extract


Preheat oven to 325 degrees and line a baking sheet with parchment paper. In large bowl, stir together the flour, salt, and baking soda. Add the brown sugar and walnuts and mix until blended well.

In separate bowl, whisk eggs together with vanilla extract. Stir egg mixture into dry mixture and stir until combined. Press dough onto bottom of baking sheet. Bake in preheated oven at 325 degrees for 12 to 15 minutes or until browned lightly. Remove and let cool on rack, then cut into squares.
