This recipe for coconut infused rice makes a very fluffy, creamy dish. Make sure to rinse the rice beforehand; this helps the starch wash off so that the rice is fluffier when cooked.

It's possible to make this without a rice cooker, too. Just follow the recipe as directed, but bring the liquids to a rolling boil once all ingredients are added, then cover and simmer until the rice is fully cooked.

The hardest ingredient to find may be the pandan leaves. They're a southeast Asian sweet herb often used in Thai desserts and drinks. If you don't have an Asian specialty foods store in your area, you might have an easier time finding pandan extract. You can also purchase pandan leaves fresh, use some for the rice, and freeze the rest until needed.

  • 1 cup basmati or jasmine rice

  • 1/8 tsp white pepper
