It's really easy to make this strawberry cream salad. Although, the term "salad" still throws me off a bit, because this dessert's base is made from ice cream and cream cheese. Something in the very core of my being still wants to define a "salad" as something primarily involving mixed produce and dressing instead of ice cream, despite what the rest of the culinary world decides.
No matter what it's called, though, it still tastes light and heavenly. I'd recommend finding some double-churned strawberry ice cream to use in the recipe. It's softer to start out with, and will give you a lot less trouble trying to mix it together with the cream cheese.
Ingredients:
- 8 ounces cream cheese, softened
- 1 quart strawberry ice cream, softened
- 1/2 cup Miracle Whip
- 2 17-oz. cans fruit cocktail, drained
- 1/3 cup chopped nuts
Directions:
Combine cream cheese, ice cream, and dressing, mixing until well blended. Fold in fruit and nuts. Pour into 9-inch square pan. Freeze until firm. Chill before serving.
