Greek Lamb w/ Garlic Herb Rub

A traditional Greek leg of lamb usually involves inserting garlic into the slits of meat as well as seasoning it with savory herbs like rosemary and sage. After cooking the lamb, pour a small bit of lemon juice over the top to give it an extra Greek flavor.


  • 1 lamb leg (appx. 3 pounds), boned and butterflied
  • 1 tablespoon minced parsley
  • 1 tablespoon ground sage
  • 1 tablespoon chopped rosemary
  • 2 teaspoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black ground pepper
  • 2 tablespoons crushed garlic


Rub the entire lamb leg with parsley, sage and rosemary. In a small bowl, mix the olive oil, lemon juice, salt, and pepper. Pour the mixture over the lamb leg and rub it into the meat. Take the crushed garlic and stuff it into the crack and crevices of the lamb leg.

Preheat the broiler or barbecue grill. Ensure the grill is non-stick, and if it's not, cover it with foil. Once the grill is very hot, place the meat on it and turn every 10 minutes for rare, 15 minutes for medium, and 20 minutes for well done. Pour lemon juice evenly over the leg of lamb. Finally, cut the lamb into half-inch slices and serve.
