This rich, creamy caramel sauce uses just three ingredients: pure granulated sugar, whipping cream, and butter. Once you master the technique, you won't want to go back to store-bought sauce.
The trick is to prevent the sugar from crystallization. When the sugar starts to caramelize over the heat, the mixture can quickly start to burn if it gets too hot. To help prevent this, you can add a tiny drop of acidity such as lemon juice or cream of tartar.
Granulated white sugar works best for caramelizing. Powdered sugar and brown sugar both have impurities that prevent a flawless caramelization process.
Store in an air-tight container in the refrigerator; the sauce will keep for several days. It's delicious served over ice cream, cheesecake, cinnamon apple French toast, and other sweet treats.
