Indian Restaurant Tops Their Own Dosa World Record

world record dosaThe Sankalp chain of restaurants in India has just beaten a world record for creating the World's Longest Dosa -- beating their previously-set record from three years ago.

A dosa (or thosai in Thai) is a traditional southern Indian crepe made from a base of rice and lentils.  The grains are soaked and/or fermented, finely ground, rolled into a doughy mixture, and quickly fried.  It is often served as a breakfast dish, and can be filled inside with a variety of flavors such as coconut chutney or spiced potatoes with onions.

Sankalp employees have just finished creating a dosa that measures 32.5 feet.  The previous world record, set by Sankalp in 2006, measured thirty feet.  And the original world record started Sankalp's tradition in the first place, with a dosa measuring 25 feet.

One of the restaurant's chefs, Swami Goda, explained that this accomplishment is no easy task.  "In our team, we have 16 chefs who worked in tandem to prepare the dosa. It required proper coordination among the men for spreading the batter across the hot plate simultaneously."  Rolling the dosa across a 35-foot hot plate, and maintaining a consistent temperature throughout the entire length of the dough, turned out to be one of the most challenging aspects of the task.

But the team's coordination efforts were executed successfully in the end. Sankalp's record-breaking dosa took less than 40 minutes to complete, breaking another record in the process.
