J.A. The International Series, made in China from German alloy stainless steel, offers an economical alternative to heavier and more expensive forged steel blades.

Construction is not the only thing to consider when looking at this set. Stamped steel like this, made to modern specifications, is not a poor choice. Modern alloys and streamlined procedures put higher quality into these methods that in other times would have been less than satisfactory. Edge holding ability of these knives is not equal to high end products, but is easily maintained with the steel provided. Buyers do report that some sets arrive sharp and some arrive in need of work, so touching up with a flat stone might be necessary. Full tang gap free handles are sanitary, sturdy, and clean up easily (preferably by hand, although the set is dishwasher safe).

There is some redundancy in the choice of knives in the set. Two sizes of Santoku are provided--while the Santoku is one of the most used knives in a modern kitchen, one is enough for most people. The set also includes two 3" blade paring knives, one with a sharper point style than the other. One will be used while the other will fit the extra slot in the knife block.

The East Meets West collection does provide practical quality for budget minded buyers willing to put some extra work into blade maintenance. It's an excellent starter set--someday you'll want better.
