Kai Shun Vegetable Knife Beautifully constructed of solid stainless steel with a blade forged in the famous Shun Damascus pattern, this small vegetable chopping knife has the raised handle design created by Chef Alton Brown. Chef Brown liked the quality and efficiency of Shun cutlery but found that his hands were too large to use the smaller knives in this series without hitting his knuckles on the cutting board. This interesting lifted handle pattern was the eventual solution.

If your situation is the same as Alton Brown's, you'll like Alton's Angles, the series built upon his idea. If you intend to use this small knife as a paring knife, the usual western application for a smaller blade, you'll find the handle design awkward. Efficient and comfortable use is limited to small chopping and slicing tasks rather than the general purpose functions of a traditional paring knife.

The design is executed with Shun's typical attention to quality. The blade is forged with 32 layers of high carbon stainless steel sandwiching an inner core layer of VG-10 stainless steel, very hard and well known for holding a sharp and thin edge. The combination results in a strong blade with extraordinary sharpness and slicing ability, but some vulnerability to edge chipping. The knife should be used only on wooden or plastic cutting boards, and not on hard items like bones or frozen food.
