English muffin pizzas are a quick & easy low-fat alternative to ordering a mega-calorie delivery pizza whenever you get that craving. And it's a recipe that allows you a lot of room for creative interpretation. Try adding toppings such as grated carrots, sliced mushrooms, chopped broccoli, pineapple bits, chopped peppers, sliced zucchini, chopped fresh spinach, sliced olives, etc. The colorful variety in your choice of toppings gives this recipe its name.


  • 3 English muffins (preferably whole wheat), split into 6 halves
  • 1/2 cup pizza or pasta sauce
  • 1/2 cup mozzarella cheese, grated
  • 3-4 fruit or vegetable toppings of your choice, listed above


Spread sauce on each muffin half before arranging your selected toppings on top of the sauce.. Sprinkle cheese over the layer of vegetables. Bake in a 350-degree oven for 10 minutes. Cool and serve.

    Great alternative to satisfy pizza craving! I did something similar using whole wheat English muffins. I used ham, pineapple and onion slices. So Yummy!
