Lite Low Fat Drop Scones Recipe

You can only do so much outdoor home maintenance when the summertime weather gets too hot. Gardening, weeding, and touch-up painting really do take a toll on your energy. So relax out on your shady porch with a spot of tea and these delicious scones -- and relax knowing that the recipe you've made isn't going to go straight to your waistline. The whole grain flour and sugar substitutions add fiber and greatly reduce calorie content.

Ingredients:

  • 8 oz. wholemeal flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon caster sugar
  • 2 teaspoon honey
  • 1 egg
  • 1/3 cup skim milk

Directions:

Sift the flour, bicarbonate of soda, and cream of tartar into a bowl. Stir in sugar and honey. Beat the egg slightly and add it with the milk into the mixture. Beat well until the batter is smooth. Spray canola oil into a non-stick frying pan and heat it. Spoon the batter onto the hot pan (using the size of a dessert spoon as a guide), and cook until bubbles appear on the surface of the scones. Flip over and press with a spatula until both sides are cooked. Let each side cook for 1 minute. Makes 20 servings.
