New David Leite Cookbook: “The New Portuguese Table”

david leite portugese cookbookLast month, James Beard Award-winning author and chef David Leite's new cookbook hit the shelves. It's titled "The New Portuguese Table," and hopes to resurrect a little-known cultural perspective on gourmet dining.

The subtitle, "Exciting Flavors From Europe's West Coast," hardly begins to describe the extent of research done to create this cookbook. The flavors and cooking techniques presented here date back to Portugal's "old country," and highlight the differences one would find when traveling to each of Portugal's eleven provinces. By doing so, this book is just as much of a travel companion as it is an eye-opening cultural experience to both mainland and Azorean cuisine.

Staple recipes such as Portuguese "green soup," or caldo verde, and piri-piri sauce are included in this collection, as well as new twists on traditional meals. You'll read about lamb meatballs with ginger and cumin, partridge with coriander and curry, and duck breasts sauced with white port and black olives. And from the comments of those who have read the book, Leite's recipe for sweet bread is out of this world.
