The Nuwave Oven is indeed a new idea, and with practice and imagination you can create many healthful recipes--but the numbers are not so meaningful. This is a 1500 Watt device, according to the manufacturer. That is an operating wattage of 42% of the maximum wattage of a 3500 watt conventional oven capable of cooking four times the amount of food. The Nuwave has no insulating shell, as a conventional oven would, and I think you should take the company's efficiency claims with several grains of salt.

Obviously this is a handy appliance for cooking small amounts of food, and with some careful forethought, like slicing the chicken to allow fat to drain, you may get more fat release. One of the opposing advantages I have heard people claim, regarding this machine, is that it sears the bird and retains the fat. Do it either way--fat has more flavor. I know what I'd choose.

As with any cooking appliance, efficiency and results depend partly on the cook. All a cook needs is a dependable and consistent oven, and the Nuwave has a marginal reputation for that. If you have limited space, lack a real oven, or simply want to experiment, this can be an interesting addition to your kitchen. It won't completely replace a good full sized oven, but it can be a handy accessory.
