This hearty recipe for Oatmeal Raisin Pancakes is easy to make in the mornings and tastes like having cookies for breakfast. The whole family will love these, especially the kiddos.

Allow yourself a few extra minutes in the kitchen, though. Due to the thicker texture, they'll take a bit longer to cook than your typical pancake batter -- but they're so worth it.

To make this recipe gluten-free, you can shop for gluten-free rolled oats and a pre-made pancake flour mix, or you can concoct your own with gluten-free flours that you already have. Try mixing 2 C rice flour, 2/3 C sorghum flour, and 1/3 C tapioca flour for an all-purpose blend, then add xanthan or guar gum to give it that "gluten-y" feel. For pancakes, use about 1/2 tsp. of xanthan or 1/4 tsp. of guar gum per 1 C of the flour mixture.

  • 2 whole eggs
  • 2 Tbsp brown sugar - can substitute with maple syrup
  • 2 tsp vanilla
  • 3 Tbsp canola oil
  • 1 1/2 cups rolled oats
  • 1/3 cup raisins
  • 2 cups buttermilk - can substitute with plain yogurt
  • 3/4 cup Flour
  • 1/2 tsp baking soda
  • 2 pinchs nutmeg
  • 1/2 tsp baking powder
  • 2 pinchs cinnamon
  • 1/2 tsp Salt
  • 1 Tbsp oil or butter
