Panzanella salad is an Italian dish originating in Florence. Its stand-out ingredients are very simple: day-old crusty bread, fresh tomatoes, basil, and mozzarella cheese.

Choosing ripe, flavorful tomatoes is the most important thing to remember when shopping for the ingredients. Your best bet is to find local produce -- meaning tomatoes that have been freshly picked, not shipped in from a far-off location.

This recipe adds only two more ingredients to the salad beyond the classic Italian standard: red onion and olives. The intent is to keep the ingredients balanced and simple.

Serve with a homemade vinaigrette dressing made with crushed garlic, red wine vinegar, extra-virgin olive oil, and salt and pepper to taste.
