Quick & Easy Grilled Chicken Recipe with Lemon, Rosemary & Garlic Marinade

This is a quick and easy grilled chicken recipe that involves very little cooking time. Just fire up the barbecue, grill the marinated chicken for a couple minutes on each side, let it rest for a few minutes while you set the table, and enjoy!

The chicken and marinade ingredients will need to be prepared at least an hour before you plan on grilling -- but this is quick as well. Split the chicken breasts in half and flatten them with a meat mallet to help them tenderize and cook faster. Add the cuts to a marinade of lemon juice, olive oil, garlic, rosemary, and chili flakes, which can be lessened if preferred, but keep in mind that they do add a lot of flavor to the dish.

Ingredients
  • 2 Tbsp fresh lemon juice
  • 6 Tbsp extra-virgin olive oil
  • 1 small garlic clove
  • 1 Tbsp fresh rosemary
  • 1/4 tsp dried chili flakes
  • 4 chicken breasts
  • kosher salt (to taste)
  • freshly ground black pepper (to taste)
  • Italian flat-leaf parsley (for garnishing)
  • extra-virgin olive oil (for finishing)
