Here's a refreshing twist on the tried-and-true side dish of cooked peas. In this recipe, flavorful garlic and onions are added to the dish, then tossed with romaine hearts and fresh mint for a crisp and cool consistency. The dish is high in fiber, antioxidants, and green phytonutrients, and it only takes 15 minutes to make.

For something a bit crunchier, leave out the fresh mint and add a bit of toasted almonds and pistachios, roughly chopped. Serve over brown rice.

  • 1 cup onion
  • 1 1/2 cups celery
  • 1 small romaine heart
  • 7 fresh mint leaves (approx.)
  • 1 clove garlic
  • 2 Tbsp unsalted butter
  • 1 Tbsp grape seed oil
  • 2 cups frozen green peas
