If your family celebrated Easter, you likely outdid yourself with cooking up a storm this past weekend. So you deserve a break; take it easy for a night or two!

You'll need to plan for a quick morning saute, but otherwise, this slow cooker recipe is quick and easy to make. When the stew is fully cooked, serve over a bed of rice.


  • 2 pounds beef stew meat
  • 3 tablespoons olive oil
  • 1 cup onion, sliced
  • 1/2 cup green pepper, chopped
  • 1 large garlic clove
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups beef stock
  • 1 8 oz. can tomatoes
  • 1 4 oz. can mushrooms
  • 1/3 cup barbecue sauce
  • 3 tablespoons cornstarch
  • 1/4 cup cold water


Saute the pepper, onion and garlic in the olive oil. Next add all the ingredients, except the water and cornstarch, to the slow cooker. Stir to mix well. Cook on low setting for 8 to 10 hours.

Just before serving, mix together the water and cornstarch. Add to the slow cooker and stir to thicken.
