Prep the chicken pieces beforehand, and this recipe for Southwestern Crock Pot Chili can't get any easier. It's recipes like these that make me so thankful for whoever invented the slow cooker. For taco seasoning mix, you can buy one from the store, or you can add the spices separately so that you can adjust the spiciness. Common taco spices include chili powder, onion powder, garlic powder, salt, paprika, and a touch of cumin and cayenne pepper.


  • 2 lbs. chicken thighs, diced with bones and skin removed
  • 3 cans (14 oz.) diced tomatoes with chilies and garlic, with juice
  • 1 pkg. (1 oz.) taco seasoning mix
  • 2 cans (15 oz.) Great Northern beans, drained
  • 3 cups water


Put everything in crock pot and stir to combine ingredients. Cover and cook on Low for 6 to 8 hours or until chicken is tender.
