As long as you've got help to chop up all the veggies in this chili beforehand, making this dish the day of should be a breeze. Increase or decrease the amount of chili powder to your liking, and add other peppers or hot sauce if you need an extra kick. It's a dish the whole family will enjoy, and it's especially tasty when served in a fresh bread bowl.

Ingredients:

  • 6 strips bacon
  • 2 lbs. boneless beef cubes
  • 2 15 oz. cans kidney beans, drained
  • 1 28 oz. can tomatoes, cut up
  • 1 8 oz. can tomato sauce
  • 1 cup finely chopped onion
  • 1/2 cup thinly sliced carrots
  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped celery
  • 2 tablespoons minced parsley
  • 2 cloves minced garlic
  • 1 bay leaf
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Directions:

Fry the slices of bacon and drain on a paper towel. Place the beef cubes in the bacon pan, and brown the meat with the bacon drippings for about 4 to 5 minutes. Add the meat to the slow cooker. Stir the bacon and the rest of the ingredients into the slow cooker. Cover and cook on a low setting for 10 hours or until the meat is tender and done. Stir occasionally.
