Turkey Club Sandwich w/ Gouda Cheese & Arugula

This recipe is one you'll want to make instead of shelling out big bucks for those typical party-platter sub sandwiches. It's healthier and has that fresh, homemade taste.

Once this easy-to-make sandwich has been assembled, you can wrap it up as-is to take to your social gathering, or cut it ahead of time and wrap each sandwich serving individually. It'll slice easily with a large serrated knife.

Ingredients:

  • 2 ripe avocados
  • 1 large lemon, juiced
  • 1 drop Tabasco
  • 1 dash salt
  • 1 French baguette
  • 1 lb. sliced smoked turkey
  • 6 oz. Gouda cheese, thinly sliced
  • 8 slices bacon, cooked until just crisp
  • 2 large Beefsteak tomatoes, sliced
  • 16 large arugula leaves

Directions:

Remove avocado meat from peel and pit. Put the avocado insides into a bowl, then add the lemon juice, Tabasco, and salt. Mash until smooth and easy to spread. Cut the baguette in half lengthwise and spread the avocado mixture on both inside halves of bread. Arrange the sandwich ingredients evenly over one half of the baguette, then top with other half.
