Wusthof Classic Chef's Knife This very popular Classic Chef's Knife from Wusthof of Solingen, Germany, is available in sizes to fit any hand or task; six different blade lengths from 4.5" to 10" will do anything from mincing herbs to slicing melons. The 6" blade is a good general purpose choice for mincing, slicing vegetables and doing general kitchen prep, but if you like to save time by slicing several celery stalks at once, you may find the blade a little short.

The build of this knife is one that has been tested in kitchens at least for decades with excellent results. The one piece forged blade, bolster, and full width tang, carefully ground and polished and fitted with riveted composition handle slabs, is comfortable in use and easy to clean. Fine cutlery like this, although stainless steel, should be hand washed to prevent blemishing and damage to the cutting edge.

Forged blades no longer automatically outclass blades of stamped stainless steel, and now that the quality of the thinner stamped blades has risen, some may find the forged bolster of knives like the Wusthof Classic to be unnecessary and even awkward in comparison. The forged blades are heavier, and the extra strength may be more than is absolutely necessary. Still, there are many chefs who prefer the tried and true style of this blade.

The Solingen steel of the Classic will take a fine edge, but will also require upkeep. To keep the edge in top shape, hone with a sharpening steel before using.
