Wusthof Classic Ikon Sandwich Knife This 6" stainless prep knife from Wusthof of Solingen, Germany, shows the strong one piece forged blade, bolster, tang and end cap that made Wusthof's older Classic line one of the most durable around. The design of the Ikon handles has been much improved over the squared handle slab pattern that still is standard in many professional kitchens. The rounded edges and ergonomic shape of these steel riveted handles will do much to add comfort to an already good pattern.

The utility or sandwich blade is taper ground for a strong and efficient cutting edge, tough enough to resist chipping and both twisting and flexing stresses. For slicing work, like cutting tomatoes and other veggies for sandwiches, the knife needs to be kept razor sharp. That should be easy if you touch up the edge regularly with a sharpening steel. This alloy was chosen for easy sharpening as well as edge holding ability.

A knife of this size is useful for small carving tasks as well as boning fish and poultry. Where you need accuracy as well as strength and leverage, this knife is always handy.

Wusthof knives, and most other modern stainfree blades, should be hand washed and dried and stored in wooden knife blocks. The rough treatment and harsh chemicals of a dishwasher will not affect the build, but it may blemish the finish and dull the edge.
