Wusthof Gourmet Baker's Cake Knife Wusthof's Gourmet 12" Baker's Knife is the perfect blade for the brave souls who practice the ancient art of cake torting. Rather than take the easy way and bake cakes in layers, some bakers actually use a knife like this one to cut cakes into horizontal layers, opening up the centers for special fillings and adding layers of icing as the cake is reassembled. Doing that requires a steady hand, a delicate touch, and a good baker's knife.

Wusthof's model is laser cut from high carbon Solingen stainless steel and accurately ground to a convex cross section by computer controlled machines. One edge has micro serrations for accurate cuts in light and crumbly cakes while the other is plain edged for heavier pound cakes. The convex shape of the blade lifts the cake as the cut is made, so the layers separate without tearing. The wide spatula shape helps lift the separated layer, the first step in the tricky process of removing the layer intact. The compression riveted synthetic handle offers a comfortable grip during those critical moments when hours of work is suddenly at risk.

Although you can hone the plain edge when needed, any maintenance the serrated edge needs will have to be done at the factory. Since this is a light duty knife, if used as intended the edge should last a very long time. For the longest life of edge and finish, clean and dry the blade by hand soon after use.
