Apple Pot Roast with Fresh Peaches

This throw-it-together Apple Pot Roast is well worth the short time it takes to fix. Try substituting other fruits such as pears and plums to make this quick meal a family favorite.


  • 1 (17 oz.) pkg. refrigerated cooked beef roast with juice
  • 1 Tbsp. butter
  • 2 Tbsp. shallots, minced
  • 2 Tbsp. tarragon vinegar
  • 1 C fresh apple wedges
  • 1 C fresh peach wedges


Pour the juice from the roast into a bowl. Melt the butter in a skillet over medium heat. Stir the shallots into the melted butter and cook for 1 minute.  Place the roast in the skillet with the shallots and reduce the heat to low. Cover the skillet and simmer the roast for 10 minutes or until heated through.

Pour the reserved juice into a mixing bowl. Add the vinegar and stir until blended in well. Pour the juice over the top of the meat. Lay the apple and peach wedges on top and along the sides of the meat. Cover the skillet and cook 2 minutes longer. Makes 4 servings.
