Barbequed Vegetables w/ Gruyere Recipe

If your body just can't deal with any more hamburgers or hot dogs today, here's a tasty meatless option to help you celebrate this Fourth of July with style.

Ingredients:

  • 6 to 8 tomatoes, cored
  • 2 small zucchinis, sliced in half
  • 1 red pepper, quartered
  • Olive oil
  • 1 tablespoon chopped basil
  • 1/2 teaspoon garlic
  • Kosher salt
  • Ground black pepper
  • 4 large eggs
  • 1/2 cup milk
  • 1 cup shredded Gruyere cheese
  • 1 cup bread crumbs
  • Grated Parmesan cheese

Directions:

Coat the vegetables with olive oil and grill them over medium heat, turning them over at least once. After they are cooked, let them cool and then cut the vegetables into small pieces. Keep all the vegetables in a bowl and add the chopped basil, garlic, salt and pepper.

In another bowl, add eggs, milk and Gruyere cheese. Place the mixture over the vegetables and stir and then pour into a baking pan. Add the breadcrumbs and parmesan cheese to the mixture and grill on low heat for about 25 minutes or until cooked well.
