This recipe for Homemade Hard Boiled Egg Mayonnaise Spread is a really quick and easy way to substitute the flavors and consistency of mayonnaise if you can't make a trip to the store. By only using one egg and adding probiotically-friendly yogurt, you're also making a spread that's lower in both cholesterol and fat, and it's easier on your digestive health, too.

  • 1 cup yogurt
  • 1 Tbsp. lemon juice
  • 1/4 tsp. prepared mustard
  • 1 hard boiled egg
  • 1/4 tsp. celery seed
  • 1/2 tsp. salt

Put all ingredients in a food processor and pulse until well blended and smooth. If you prefer, you can also just chop the boiled egg very small and blend ingredients together with a fork or whisk. Keep refrigerated in a jar with a tight lid, and be sure that the spread is chilled thoroughly before using it for the first time.
