castelmonastero-ramsayToday is the opening day for celebrity chef Gordon Ramsay's newest restaurant and cantina at Castel Monastero, a new theme resort and spa set in the historic town of Monastero d'Ombrone in the Chianti region of Tuscany. This retreat center is located in a restored 11th-century medieval village and is surrounded by olive groves and vineyards -- an appropriate setting for an Italian-themed rustic getaway.

The restaurant is aptly named Gordon Ramsay at Castel Monastero, though in actuality it is a collaborative effort with executive chef Alessandro Delfanti, an experienced culinary artist specializing in Mediterranean cuisine and international modern cuisine. Together, the chefs selected a menu featuring local/regional ingredients such as Pecorino from Fossa, onions from Certaldo, lamb from Zeri, and world-renowned Chianina beef.

Visitors to the resort will want to sample these signature dishes from the menu: sour green apple and horseradish risotto flavored with broth of red mullet and baby fennel, and Chianina beef tenderloin with artichoke ravioli and Certaldo onion jam.

Gordon Ramsay's Cantina Restaurant is also on the resort's premises, and offers a steady rotation of wine tasting seminars and gastronomy classes approved by chefs Ramsay and Delfanti as well.
