Henckels Twin Signature Chef's Knife Henckels Twin Signature 8" Chef's Knife, a lightweight stamped steel variation of the company's better known forged knives, has much of the traditional look but cuts back a bit on features. Owners of older Henckels patterns may be more interested in the forged products.

There is quality here, but in an updated form--the blades, cut from rolls of high quality stainless steel and ice hardened to improve edge retention, are laser tested to ensure proper grind and cutting edge. The final step is hand honing by expert craftsmen. Basic construction is full tang with triple riveted synthetic slab handles.

What's missing from this new process is the forged bolster and end cap that returning customers will know, but the Signature series handle offers a secure contoured grip without the extra weight. This easily sharpened knife has average edge retention and will usually require touching up with a honing steel on a daily basis.

This chef's knife will do a good job of slicing vegetables, meat and most other food products, but it's lighter duty than older "cook's knife" patterns that were built heavy enough to do nearly all the work in a kitchen. You'll find the Signature flexible, the thinner steel an advantage in many slicing tasks--good for mincing and chopping herbs. For the heaviest jobs like chopping through bone, cutting up frozen food or hard squash, you'll need something stouter.
