CMT Artists Of The Year Awards Dinner Features Gourmet Celebrity Chefs

The CMT country music network held its Artists of the Year awards ceremony in Nashville last week, complete with an elaborate dinner celebration to honor the event's nominees -- and it was nothing short of spectacular. The dinner included three gourmet courses prepared by James Beard award-winning chefs as well as custom chocolates inspired by popular country artists Taylor Swift, Carrie Underwood, Zac Brown Band, Lady Antebellum, and Jason Aldean.

Chef John Currence of City Grocery started the dinner with an appetizer course of sweet onion and fennel butter-poached Gulf shrimp with a maque choux corn pudding tart and spicy red pepper coulis. Formerly of Vidalia and soon to open Rogue 24, Chef RJ Cooper then presented the first of two entree courses, which was smoked pork belly with heirloom beans, rye-organic gastrique, and a chestnut emulsion. The second entree course was prepared by Chef Michael Schwartz, concluding the meal with his slow-roasted, grilled barrel smoked grass-fed beef brisket served with pumpkin panade, dandelion greens, and aged goat cheese. His beef brisket was brined in a brown sugar solution, rubbed with cumin, sage and salt, and then smoked overnight.

Chocolatier Bethany Thouin of Nashville's The Cocoa Tree complemented the evening with an array of custom chocolate truffles, each inspired by a CMT honoree. She explained, for example, that the truffle inspired by Taylor Swift "exemplified a fairy tale" and was made from white-chocolate-cheesecake ganache swirled with dark chocolate and homemade graham crackers, then dipped in white chocolate and sprinkled with additional graham crackers.
